Crushing on a teacher is a total cliché for a good reason. It happens a lot, and sometimes things progress to a real relationship of some sort. Those can be fun and positive for both, but sometimes they end in a complete disaster. So it's not that different to more vanilla relationships.
Some things you might think about:
First, would it violate any laws or codes of conduct at your university? There are places where it's against the law for any teacher to have a sexual relationship with a student, no matter their ages, but I'm pretty sure it's legal in most places. But universities sometimes have rules against this because allowing teaching staff to have relationships with students obviously creates the possibility for abuse of power. Maybe those rules aren't much of an issue for you, but it might have consequences for his career.
Other things to think about are the age difference and the power dynamics. It's understandable to be attracted to people who have power and are worldly-wise when you're young, but guys like that sometimes exploit and abuse their power. If he's willing to progress things with you, I think you might want to ask yourself how many other students he's been involved with as they passed through his life, but maybe that isn't important to you.
