In a role reversed way, there are echoes here of that movie 'My Best Friend's Wedding', where a woman get's obsessed by a male friend just because she hears he's getting married and she travels to where he is to break up the wedding. Not that they'd dated, but it still gives an interesting illustration of how sudden and unexpected unattainability fuels desire. I recommend you watch and learn.
I would agree that following someone on FB isn't really stalking, though, as it's all public access information...unless you've taken to befriending her friends to find out extra, in which case, you've crossed the line. Otherwise, don't label yourself a stalker or you're liable to really become one.
Is it normal that I'm moving to Hawaii to stalk my ex-girlfriend?
