I used to hate hearing tracks that were recorded live.
..And then I found The Who.
..And then I heard 'Live at Leeds'
..And then I developed a massive hard-on.

Anyways, I find that a lot of bands just play the songs as they were played in the studio. I figure that those tracks are only best heard at the concert. But there are plenty of bands out there who have crafted an awesome stage act, such as The Who.
It depends on who you listen to. It all depends on the artist, for me anyways.
