My guess? You have an intolerance to Sulphites. Sulphites are commonly found in wine and beer - they can be naturally occurring as a consequence of the fermentation process but are sometimes added as a preservative. Symptoms of sulphite intolerance can include diarrhoea and other digestive problems - that might explain the gas and sudden need for a bowel movement.
The solution is to stay away from wine and beer. Stick to spirits when you intend to drink alcohol - vodka, whiskey, gin etc. most of these will not contain sulphites. Try avoiding beer and wine and see if you notice a difference :)
Or indeed as Avant-Garde suggested it could be an intolerance to gluten. Gluten can be present in beer and, though less likely, in wine. However gluten is found in a massive variety of food-stuffs so if you are gluten intolerant I expect you would have noticed having a similar or more severe reaction when consuming food with high gluten content (such as those containing wheat).
It would be advisable to check with a doctor - they can test for intolerances and advise you on what to avoid.
