I don't know about New Zealand, but I'd imagine that like Australia there are Lesbian social groups which aren't based in bars, so check out the internet.
It sounds as if you're not out with your women friends, so how do you know they're not bi or lesbian unless you let them know about yourself? Which doesn't mean making a pass at them, by the way, just telling them and see what happens.
As for "how it works", how does it work with a non sexual friend if you want to go out to a movie or dinner with them? Just ask! The first time will be the hardest.
