Carcass is carcass. I'd eat another being in a heartbeat if it came down to it, being vegan, I find it strange omnivores seem to see this as a god awful thing. Though I'd have to be starving to even touch any meat, it would be as simple as eenie meanie minnie mo choosing between a beef burger and a human burger. I'd never kill, god no, but I'd consume the already dead.
As far as being an industry, eh, no, it would just lead to child cadaver trafficking, which sounds scary enough without context. For the same reason you can't sell organs, creates a market for it, an incentive, and sooner or later the drug addicts are on the rise with bathtubs full of ice and scalpels.
As for your excorism-ish part of your story, sounds pretty bogus and too horror movie to be true, but I'll entertain you nonetheless.
