Yes, peoples metabolisms change over the course of their lives, typically being faster in the young and slower in the old. The human body is also very adaptive. As a result of you eating a much more restricted diet for a long period of time, your body has sensed that it cannot afford to operate such a fast metabolism (in effect starving) and so it has adjusted to make the most of the food you eat, thus lowering your metabolism. But I would certainly recommend eating more than an apple or two today, as you aren't getting enough protein/carbs/fats and micro-nutrients for your body to operate efficiently.
