I enjoy playing the dating game and I don't find many people attractive, however, on the rare occasion that i do find someone attractive enough to actually go through with sexual encounters once we have done the horizontal tango I lose all interest, sexual and otherwise.

I'd say yeah that's normal. It's a matter of psychology, as humans we're attracted to things that are new. Generally speaking, the idea of hooking up with someone is vastly preferable over the idea of seeing them continuously over prolonged periods of time.
That's why when you take on a permanent partner, you should agree to let each other experience the new and naughty with other people. That way you can build a solid lasting relationship without denying yourself the pleasure and without developing trust issues.
If you're a boy, yes, very normal. If you're a girl, then no. Girls generally become even more attached after they have sex with the person.
