I found it kinda cute but I understand it’s probably weird to most people. Depends what kinda info but I figured he meant like her interests and that sort of thing so he doesn’t forget. if he is actually autistic it make some sense
It doesn't sound dangerous or obsessive at all to me. Most people do something like this in their heads.
For example, if you're looking to take someone out to dinner, see a movie, or buy them a gift, you might think back to previous conversations to figure out what they might like.
OP is just avoiding to stress his memory, and documented things that everyone tries to remember anyway.
Is having documents about the people I know normal?

Not really. It's just being more efficient. Though, if I were OP, I'd take care not to let anyone see the documents.
People tend to be arbitrary and contradictory, and they likely wouldn't see it in the simple terms.
