I'm a 30-year old guy, and I am the same way. I've given a lot of introspection to this, and I believe it's for my self-confidence (particularly in regards to sex).
Being attractive to other people is the basic motivation for keeping good hygiene, staying physically fit, and seeking financial gain.
Flirting helps me know that I could have someone else if I wanted to, which shows that I'm with my partner because I have CHOSEN to be with them, and we both know that my choice is based on things other than just sex (because I could have sex with those other people, but don't).
And if, in the end, I meet someone that I like more than my girlfriend, then I can choose to stay with my girlfriend or move on. That choice is based on how long I've been with my girlfriend, how good the time has been, and how good things seem likely to be with my would-be new girlfriend.
This process is called "dating." It's the social space in-between "single" and "long-term relationship."
