I am in love with this girl i know, she is in short, amazing. completely and i wanna tell her how i ferl but i am so incredibly scared really on what she will think, i literally can not eat or sleep because of her and it is killing me because i love her

you're not in love with her. you're infatuated with her.
1. you can ask her out.
2. never ask and maybe regret it.
i'll go with number two so you can get it over with it and start eating and sleeping again.
Do it in your own way. If asking her out, or telling her you're inlove freaks you out soo much... than it's not the right thing to do. Think of something else.
Jusat an example- You could do it somehow with a sence of humor- that always takes the pressure off .

Or to put it more like most folks would say it.
"No Guts; No Glory."
Go for it. The worst that you will hear is "No." and then at least the answer will bring you some peace of mind.
maybe try with a common friend so that person can ask about her feelings so if there is nothing you wont feel bad about it and if yes take some time then ask her out
