it's a masochistic tendency you have right there, the enjoyment of pain.
it's good that you're becoming aware of it now, and you'll be surprised to know that it's a strong addiction that you must struggle to break free from if you want to live a happy and fulfilled life.

I don't want someone who doesn't want me. It would be degrading for me to chase after such a person.

I only feel interested in girls that like me.
If a girl isn't into me I lose interest instantly.
It seems like a lot of people are not like that though and would rather obsess over someone who is not into them. I do not know why.

Just like OItsThatGuy said, "We want what we can't have." If you follow his advice, you'll do better. Stop thinking of the ones that rejected you. When those thoughts of wanting come into your mind, push them out with thoughts of someone else who, like he said, shows some interest. Don't focus or dwell on any one though unless they return that affection. Focusing on one in particular - That way lies madness and pain.

If you focus on the ones that reject you, you'll develop a habit of wanting only ones that reject you.

It's human nature to want what we can't have. It's NOT human nature to dwell on it. Think of the ones you can't have, then think of the ones you might can have. Do both. So you don't develop that bad cognitive habit and end up alone and angry.
