I used to work with a "country boy" who would bring in fried squirrel for lunch, from time to time. He would eat the head like an apple. I stopped eating my lunch in the lunchroom after that.
More fat and proteins than carbs, I guess. But there's no details online. At least I didn't find any specific about squirrel brains.
