Well, it's admirable that you don't want to upset your grandma. However it shouldn't be an obstacle in the choice of your spirituality.
I'm a Buddhist, but took the precepts only recently. Which means, you don't really have to make it official to start practicing and learning the path. Learning how to meditate right would be a good start :)
If you're wanting to convert, it's fairly clear that you don't believe in Catholic teachings any longer. If you feel your grandmother would be hurt by your conversion, then avoid the topic with her. Even if you feel that you have to attend Catholic church functions to "keep up appearances", you shouldn't have to lie to yourself within your own mind. Your beliefs, or lack thereof, are yours and yours alone.
I was all for keeping appearances until last year when I decided that I didn't want to lie anymore. Nowadays I still have to go (still living with the family and all) but I'm not gonna pray, sing, or take communion. I figure that's the best compromise I'm gonna do with myself. I proclaimed myself as not Catholic and that did not go down well with my parents. It may not have been the most prudent circumstantially, but it took a weight off my shoulders because it was this "big secret" I had been harboring for a while.

Or you could wait until you move away from them, if you already haven't. Nonetheless, definitely do when you have independence from them. I made the mistake a few years ago when I told my family I was going to be a Buddhist. It was really bad. I remember going upstairs to play on my wii and them screaming downstairs. Then they came up and literally kicked the door open and where screaming at me. They told me it be acceptable only if I believed in jesus and god, which I didn't. I hesitated and they got in my face were yelling to me about my "soul" and "doing the right thing" so I lied to them to make them stop, but it didn't stop the arguments years later. O_0
