We're on a municipal water supply, and they periodically flush the system with slightly higher levels of chlorine to kill of any persistent microbes. That can be smelled and tasted.
If you're using mains water, ask your neighbors if they've noticed anything different. Unfortunately, it's not unknown for water suppliers to make mistakes at their treatment plants and put nasty stuff in the water.
The causes could be caused by a couple of things:
1. Your water source
-City water: They might have changed how they treat your water
-Well water: Something might have changed in your well, like a mineral build-up broke up and dissolved, or a new bacteria has begun growing, or a leak might be allowing new minerals to leech into your water
2. Piping. Your pipes might be going bad, leeching metals into your water, or even leaking and letting minerals in the soil to leech in.
3. You: Your taste buds might be changing, or maybe your new dish soap leaves more/less/different residue in your cups.
The type of water treatment impacts a lot on the taste of the water. Personally, I find European bottled water hard going, though I certainly feel that way because I did not grow there.
I can relate to this, i noticed my tap water is starting to get way colder and yet its fresh as fuck. But holy hell, its temperature went from being okay to a fucking permafrost.
Like into Berkey water filters, which filters out heavy metals, parasites, and removes the chlorine taste. Try their sports water bottle, which only costs $20, and see if you like their products.
Get at least a faucet water filter if you're drinking tap water often. Supplement some iodine while you're at it.
Have you started needing to drink from a hose through a man's pocket? I've found this alters viscosity as well
