Sexuality isn't like a one time offer where you can only choose once. Nor is it age limited.
You can choose at5 or 50...you are who you are, not who you were or who you could be.
Some people know exactly what they're interested in from the time they're first aware of sexuality. Some people start out believing they're interested in one thing (often due to social forces), and then realize that isn't who they really are. Some people genuinely do desire one thing at one point in their lives, and then their preferences change.
Putting every aspect of the world in a neat category makes life easier, so it's human to want to label things, but human sexuality is just too complicated for that to work well.
