You said last human which means still animals. I would house all the stray animals that I could. For those who are infected with something like rabies that are violent I would kill or capture and release some place else. I would figure out how to drive the vehicles that have been left behind. I would train the left behind pets to do things like get my groceries.
I will train one to kill any other human on the spot. I would bar down my house so and set booby traps around the perimeter. It also depends why the people disappeared since if its desiese or something I might need weapons. I will collect all the refrigerators I can and if the power stops going try to find a way to produce my own. I am not sure if internet or cable will still work. I would go to the local library and steal all the books.
I would take them home and read them. Even without electricity we still have batteries so if tv fails will watch dvds on portable device. I think I would go and start stealing things like games and dvds from the local shops. I would stock up on animal feed since I buy the dry variety. I would go find some science books and learn how to make electricity if no people meant mine went out. I would get stuff like toilet paper, batteries and lights and keep collecting them till I started to run out. When I ran out of resources I would kill myself and my pets since I will no longer be able to care for them.
