I think if the glue weren't edible they wouldn't be allowed to put the stickers on things people are going to eat. I imagine a lot of people eat the stickers accidentally, especially the ones on things like apples but some people are not good at fruit and might also accidentally eat the ones on stuff you're supposed to peel like bananas.
I started eating them when I was a child, because someone told me that if you ate them they would stay in your stomach forever and eventually you would have to have an operation to get them all removed. I wanted to see if that were true (it's not). Now I just eat them out of habit.
