your intuition about how he feels about you proved to be correct when you looked through his phone and found that he complains about you. after you confronted him about it, he somehow smoothed that over so that you now feel that his wanting to leave you didn't happen. i think your feelings are telling you something you don't want to know, which is that it looks like the realtionship isn't working out for him.
personally, i would wonder about the fishing trip also.
