I can't lose weight?
I'm eating 1 or 2 meals and consume under 1000 calories each day. I walk for 1 hour each night and still nothing! I have no idea what's wrong with me.

Okay 1. You're not eating enough. 1000 calories is not enough.
2. What are you drinking? People tend to not realize how many calories are in their drinks. Also, are you paying attention to portion sizes? A cup, 8oz, is really not that much. Most cups are bigger.
3. Like Ligeia said, it could be your thyroid or another underlying health issue. If you have a doctor, tell them about this issue and ask about health issues that could cause problems.
Most likely you're lying to yourself. Many obese people, and 99% of vaccinated people lie to themselves on a daily basis. Try counting calories accurately instead of doing rough estimates or making dumb assumptions (oh raisins are healthy so they don't have calories) or whatever dumb bullshit you tell yourself.
I'll echo others' comments that you could have a thyroid issue or some other type of health issue, your metabolism could be halted due to too low of a calorie deficit (you are probably putting your body into starvation mode, so it is burning as little fat/calories as possible), it could be what you're drinking (even zero calorie/zero sugar sodas and other artificially sweetened drinks can have similar effects on your body to real sugar), you could be consuming too much sugar and refined carbs, or you could be mis-counting calories.
How long have you been trying to lose weight? If you've just begun, don't be discouraged if you're not losing weight as fast as you would like. It often takes time, and it's not unusual to experience plateaus throughout your weight loss journey as well.
Also, are you on any type of medication? Some have side effects of weight gain that makes weight loss even harder. It might be worth discussing with your doctor.
What kind of foods are you eating? If they are high in sodium, you could be retaining water weight. A lot of convenience foods, including ones you'd expect to be healthier options, are packed with sodium. Eating too many processed foods (even ones designed for dieting) or too much fat can also cause a plateau in weight loss.
It isn't recommended to consume under 1,000 calories per day, and I would recommend being very careful with this to avoid developing disordered eating habits. I do highly recommend using a micronutrient tracking app such as MyFitnessPal, Cronometer, etc. so that you're tracking more accurately as well as more than just calories (as sugar, fat, carb, and sodium intake all make a difference in effective weight loss, as well as overall health). Drinking plenty of water (at least 64 oz. per day) also helps, as well as making that the fluid you drink most.
Not really. 1000 calories of pure carbohydrate is the same as 1000 calories of pure fat as far as the effect on calorie absorption and weight gain. Protein is more thermogenic but most people aren't eating pure protein — they're eating protein along with fats/carbs — so the thermogenic effect is negligible. The actual calorie content is more important to pay attention to than macros for weight loss purposes.
You can argue carbs cause someone to overeat or something but that's not OP's problem as they're only getting 1000cal.
This seems counter intuitive, but maybe you aren't eating often enough. I lost 150 pounds eating 5 times a day. I rarely go 3hours without eating.
My sincerest advice to you: call your local hospital and ask to schedule an appointment with their dietitian or nutrition educator. All hospitals should have them. And follow their eating plan and schedule and I guarantee, you will lose weight.
And please, don't ever go to Jenny Craig or Weight Watchers.
Walking isnt a sufficient for exercise. Running for the distance you walked would contribute better and be faster.
Also a 1000 calories of what?
I can get by with eating crap, because some days I dont eat at all. (Tossed the idea of having food rations in my truck after becoming aware of my inability for self control)
But when I do eat crap, I'm often eating meat, very little sugar, and as much vegetables I can reasonably afford at a truck stop. I'm not getting lighter, but I'm sure as heck not gaining weight, I think I'm slimming for whatever reason.
I would eat steak or lamb or chicken with a serving of boiled vegetables and 8 hours later brown rice with tuna. Sometimes it would be 1 bacon strip, two egg whites and greek yoghurt on the side. Most recently I ate boiled Brussels sprouts and beans with cooked salmon. I'm not eating crap at all.
