It doesn't seem complicated to me. She made her choise to live a complex lifestyle, she'll have to deal with it. Which she is. OP is the one being kinda picky. Apparently she doesn't care that she isn't eating much when they're out. He should focus on other places and they can eat before they go out.
As for separate meals, it really isn't a big deal. On the rare occasion there's a candlelit dinner, something can be arranged. Most people don't eat nice dinners frequently. For daily meals, whatever both can have plus a separate main dish is pretty simple.
I can see how this could be complicated on a boat, but it isn't a difficult living situation.
