Americans don't eat a lot of things, we're used to processed and bleached food products, but "nose to tail" is becoming more of a thing here, at fancy eateries at least.
I hear bone marrow is amazing- I've never eaten it alone, but tried it in sauces in France, and that was the best food I've ever had.
I've grown up with "white meat" and perfectly non-meat meat products my whole life, and after being vegetarian for years, I don't see myself sucking anything out of a bone or eating organ meat...I know it's a waste of food, but I'm grossed out by it : (
