Some people thrive on levels of conflict & drama that others just detest - at least so I've experienced seen. I wonder how compatible you are. She may change and it is worth an effort. But that effort could be considerable and fruitless.
Even if she tones it down and grows up a bit - you may find yourself trying to fit a square peg into a round hole. So longer term, you may want to look at your options.
At the very least, I don't think you should be rescuing her from herself. You can tell her how you feel. But it is up to her what she wants to and can change.
