It could just be that he gets excited around you when you're naked and also gets sexually excited/aroused by taboo stuff, which is a hard topic to broach with your significant other.
If you're OK with the premise of showering/peeing/pooping with him in there with you as long as it's on your terms and consensual but you find him following you everywhere without you giving him the all clear beforehand unacceptable, just tell him straight that it's OK if he's into that but he needs to OK it with you first. Consent and boundaries are paramount and if you give him this sort of compromise he can breathe a sigh of relief and start to treat you in a more respectful way.
Then again, if the whole thing weirds you out and it's the actual act of being watched whilst peeing/pooping or showering with him that you don't like, you should leave him because you're perfectly within your rights to feel safe at all times.
