I know I'm referencing sci fi here, but I really like the way Jack explained it in Torchwood.
"Human emotion is energy. You can't alwas see it or hear it, but you can feel it. Ever had deja vu, felt someone walk over your grave, felt someone behind you in an empty room? Well there was. There always is."
Basically the way I see it, ghosts are just kind of echoes of consciousness, blips on the electromagnetic and vibratory fields. It's not literally the soul of the person who died there, but an echo of their life, their unique energy that is left behind.
